Top shelf: foraging, farming, fermenting. Middle shelf: the science of flavour. Bottom shelf: some of the best recipes from different corners of the world. Today is the winter solstice, the shortest day of the year (1554 sunset!) which is traditionally the day garlic is planted, to be pulled up on the summer solstice. Unlike most plants, garlic benefits from a month or two of cold weather, and a single clove will spawn a whole head. The plot will look a lot different in half a year when it’s time to harvest next year’s supply… The temperature has gone below zero, but there’s still a few plants hardy enough to survive and harvest, including chicory, baby pak choi, parsley and a lone green cauliflower An inspiring visit to Abraham’s Spice Garden in Kerala’s Cardamom Hills, seeing and tasting a mind- and palate-boggling array of fresh spices and fruits “Thanksgiving thali”: leftover turkey chettinad, aloo tikki from leftover mashed potato, and sag with autumn garden greens 🇺🇸🇮🇳
